White Chocolate and Apricot Cookies

I love these cookies. They smell so good when you are mixing them up and I would be happy to just eat a bowl of the dough before adding the yummy extras.





I found this recipe in 2004! I still have the original print out (12/6/2004).

Makes about 3 dozen cookies

1 Cup Unsalted Butter
1 Cup Packed Light Brown Sugar
2 Eggs
1 Teaspoon Vanilla Extract
1 Teaspoon Almond Extract
2 Cups All Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Dried Apricots, coarsely chopped
8 oz White Chocolate, coarsely chopped

(This is also delicious with craisins instead of the dried apricots.)

Preheat oven to 350 degrees

In a mixer beat the butter and brown sugar until blended. Add in the egg, vanilla and almond extracts continue to mix until combined. Add the flour, baking soda and salt. Mix until combined then using a wooden spoon mix int he apricots and the white chocolate.

Drop the dough by tablespoons onto an ungreased cookie sheet, spacing them about 2 inches apart. Bake until the edges are lightly browned 8-10 minutes. Cool on wire racks.

*Make sure that the dough isn't to tall...I used a cookie scoop and had to press them down a bit with the back of the spoon so the middle of the cookies weren't too doughy.
