Sometimes things just work out for me. I want to make apple pie someone gives me a bag of apples...I am craving Olive Garden's Zuppa Toscanna soup and someone gives me a bag of Kale. I am just lucky like that. I am waiting for it to translate into lottery winnings.
1 lb Spicy Italian Sausage
1/2 lb of bacon (I used Turkey bacon because that is what I had)
2 Large Potatoes (chopped)
1 Onion (diced)
4 cloves of roasted garlic (mashed up)
4 cups of Kale (chopped)
3 cans of chicken broth
2 cups of water
1 cup heavy whipping cream
1/2 tsp crushed red pepper
Salt & Pepper to taste
1.Sauté Italian sausage in a pan. Drain excess fat, and set aside while you prepare other ingredients.
2. In the same pan, sauté bacon and onions over low-medium heat for approximately 20 mins. or until the onions are soft. Drain the fat and set aside.
3. In a large pot add chicken broth, water, garlic and crushed red pepper to the pot and heat until it starts to boil.
4. Add the sliced potatoes and cook until soft (about 30 min).
5. Add the sausage, bacon mixture and the Kale
6.Add the heavy cream and just cook until thoroughly heated.
